chocolate lava cake
Molten Chocolate Cakes

2/3 C. bittersweet or semisweet chocolate or combination of 2 unsweetened baking chocolate squares and semi-sweet chocolate chips (The richer and darker the chocolate = richer, darker cake)

10 T. butter (1 cube + 2 T.)
3 large eggs
3 large egg yolks
1 1/2 C. powdered sugar
1/2 C. flour

Preheat oven to 450. Spray 6-8 ramekins with PAM

Stir chocolate and butter in med saucepan over low heat til melted.

Whisk eggs and egg yolks in large bowl to blend. Whisk in sugar, then chocolate mixture and flour. Pour batter in equal portions into prepared ramekins.

Bake cakes until sides are set but center remains soft and runny, from 9 or up to 14 min for cakes that have been refrigerated. run small knife around cakes to loosen. Immediately turn cakes out onto plates. Serve with ice cream.
