Valerie's Sour Cream Lemon Pie

Sour Cream Lemon Pie


1 C. sugar
3 T. Cornstarch,
1/4 C. butter
1 tsp grated lemon rind,
1/4 C. lemon juice from fresh lemon
3 unbeaten egg yolks
1 C. milk
1 C. sour cream
Combine sugar and cornstarch in saucepan or double boiler.
Add butter, lemon rind, lemon juice, egg yolks and milk. Cook and stir over med. heat just til boiling. Boil for about 3 min. stirring constantly and being careful not to scorch. Remove from heat, cool and fold in 1 C. sour cream. Spoon into 9" baked pie shell. Top with whipped cream.
