Cilantro Lime Chicken Fajitas



Marinate chicken breast in: ( 2 large chicken breasts cut into 4 or more thin flat pieces)

1 C. coarsely chopped fresh cilantro
3/4 C. olive oil
1/3 C. lime juice (juice of 1 lime)
2 1/2 tsp. ground cumin
2 tsp. garlic salt and/or a little of the Sprouts Mexican seasoning
2 tsp. red pepper flakes

After marinating an hour or more grill, slice and serve with julianned onion and peppers, guacamole and salsa.

Julienne:
1 red pepper
1 green pepper
1 onion
2 poblano chiles (opt)
Toss with olive oil, garlic salt and paprika.
Broil on a cookie sheet or grill
remove avocado pit

Guacamole

for very smooth and fast guacamole, use hand blender
to blend 2 avocados, juice of 1 lime and garlic salt to taste.
May add 1 T. finely diced mild onion or shallot and tomato if desired.
cut avocado open lengthwise in the center
Slice and remove avocado with spoon
or  slide peel off with thumbs if very ripe
