Scones (in Idaho) similar to Beignet

In Idaho these are called scones
they are more like fry bread

Scones

1 qt of buttermilk - warmed
2 pkgs. (2T.) yeast softened in 3/4 C. of the buttermilk
1/3 C. sugar or honey
2T. oil
1T. baking powder
2 eggs
1 1/2 tsp salt
1/2 tsp soda
6-8 C. flour

Heat buttermilk to lukewarm. Meanwhile, in large bowl or stand mixer, mix sugar beaten eggs, oil, salt, baking powder, soda, and $ C. of the flour with the remaining buttermilk. Add softened buttermilk/yeast mixture and enough of remaining flour to make a soft dough. Cover and let rise til double.  Roll out as if for cinnamon rolls. Use a pizza cutter to cut dough into pieces. Cook in about 4 inches of heated vegetable oil.
Serve with honey butter.

Honey Butter

2 sticks of softened butter
2/3 C. Honey (or to taste)
