Strawberry Spring Salad

1 pkg spring salad greens
1 basket of sliced strawberries
diced chunks of monterey jack cheese or crumbled feta cheese
carmelized pecans or walnuts or use honey roasted almonds made for salad

Carmelized Nuts

Lay out a sheet of aluminum foil or parchment paper on a large cookie sheet. Mix 1 C. nuts with 1 C. sugar in a non-stick pan over med heat til sugar starts to melt. Reduce heat and continue to stir until all sugar is dissolved and nuts are coated. Turn nuts out onto sheet and separate as much as possible as they will stick together as they cool.

Dressing

1 C. olive oil
add edible flowers like violets
to make salad even prettier
3/4 C. sugar
1/2 C. red wine vinegar
2 cloves crushed garlic
1/2 tsp salt
1/2 tsp paprika
1/4 tsp pepper
Mix together and pour over salad just before serving. Will probably only need half. Will keep in refrigerator for a week or so.
