Chinese Chicken Salad








Chinese Chicken Salad

1/2 pound cooked (grilled tastes best) chicken, cooled and cut in pieces
1 head lettuce, washed and cut in pieces
4 green onions, chopped
1/2 bunch chopped cilantro
2 T. slivered almonds (optional)
1 can drained mandarin oranges
1/2 pkg won ton skins, cut into strips and fried golden brown
1/2 pkg rice sticks (optional)  (deep fry won ton skins first, then rice sticks, they puff, not brown and are done very quickly)

Dressing

1/3 C. sugar
1 T. kosher salt
2 tsp. black pepper
1/2 C. rice vinegar
1 clove pressed garlic
3/4 C. olive oil
