Kristen's Spinach Walnut Salad with Fresh Citrus

I head romaine lettuce, torn (about 6-8 Cups)
3 C. loosely packed spinach
1/4 C. thinly sliced red onion
1/3 C. raisins
1/2 C roughly chopped walnuts, toasted
2 oranges, segmented

Dressing

1/3 C white wine vinegar
1/4 C. sugar
2 tsp. Dijon mustard
3 T. minced onion
1 tsp paprika
21/2 tsp celery seed
1 tsp kosher salt
1 C. oil

1. Toss lettuce and spinach together in a large salad bowl. Sprinkle with onion, raisins, and walnuts. Top with dressing and toss to coat. Add orange segments and toss gently.

2. For the dressing: Combine vinegar, sugar, mustard, minced onion, paprika, celery seed, and salt in a blender and process until smooth, about 20-30 seconds. With the blender running on slow speed, add the oil in a slow, steady stream until incorporated. Pour the dressing into a jar or other container and refrigerate.
