Sharon's Sweet Pork Tacos

                                            Pork loin
Sm can green chilies
Lg can green enchilada sauce
Dozen corn tortillas
1/2 c packed brown sugar
Can of black beans
Bag of shredded Monterey Jack cheese

    Cook pork loin in crock pot on low about 4 hours. Shred pork in a bowl and add 1/2 of the bag of cheese, green chilies, can of drained black beans, about 1/2c of green enchilada sauce and brown sugar. Lightly cook tortillas in a small amount of canola oil. Then add a couple of spoon fulls of pork mixture to each tortilla and roll up and put seam down in a 9x13 pan. Make sure u put 1/2 c of green enchilada sauce in the pan so your enchiladas don't get hard and dried out. After you have all your tortilla rolled up and in your pan. Pour all of the green enchilada sauce on top of all enchiladas and sprinkle the rest of the jack cheese. Cover with foil and put in oven 350 for 15-20 min.
