Cinnamon Bread

Cinnamon Bread


(makes 2 loaves)

1 Tbsp yeast softened in
1/4 C water

1/4 C. butter (1/2 cube) & 1/4 C. oil
1/2 C. sugar
2 tsp. salt
2 C. scalded milk

2 eggs

enough flour to make soft dough approx 5  - 6 C.

3/4 C sugar
1 1/2 Tbsp Cinnamon

Pour hot milk over oil, butter, sugar, salt mixture. Stir in about 3 C. of the flour. When mixture has cooled to lukewarm, add softened yeast/water and eggs. Mix in remaining flour. Let rise twice in greased bowl. Divide dough in half. Roll out as for cinnamon rolls, spread with butter and sprinkle with the sugar cinnamon mixture (3/4 C. sugar & 1 1/2 Tbsp Cinnamon). sprinkle a few drops of water over the surface and roll up starting with short end (opposite of cinnamon rolls) Put in greased loaf pan, seam side down and let rise til double. Bake @ 350 for approx 35 min.

For a sheen on the surface of the bread, brush with a mixture of beaten egg and milk the last 5 min of cooking time.

To prevent bread from over browning, cover with aluminum foil
