Panna Cotta

1 Cup Whole Milk
1 Tbsp unflavored powdered gelatin
3 Cups whipping cream
1/2 Cup honey
1 Tbsp sugar
pinch of salt
2 Cups assorted berries

Place the milk in a heavy, small saucepan.  Sprinkle the gelatin over and let stand for 5 minutes to soften the gelatin.  Stir over medium heat just until the gelatin dissolves but the mild does not boil, about 5 minutes.   Add the cream, honey, sugar, and salt and stir until the sugar dissolves, about 2 minutes.  Remove from the heat and let cool slightly.  Pour the cream mixture into 6 wine glasses, dividing equally.  Cover and refrigerate until set, at least 6 hours.  A good dessert to make a day ahead.  It is not necessary to use 1 C. whole mild and 3 C. whipping cream.  Any combination of milk/cream that adds up to 4 C. will work.  Can use 4C half and half for example.  Cream is very sensitive to the addition of flavors and you will taste the difference between sugar and honey for example.  You can experiment with flavors. Using real vanilla or vanilla bean and sugar instead of honey will taste different.  You can infuse with an herb flavor like lavender by  fresh lavender to the hot liquid and removing it before chilling.

Serve with fresh berries or fresh berries and syrup as pictured
