Miso Salmon with Ginger Cream Sauce

Cook Notes: The sauce is an emulsification of butter with other
ingredients so it is very important that the butter is added slowly, and over
low heat. Too high of heat or to rapid of an addition of the butter will 
cause the sauce to break.


Ingredients
  • ½ cup brown sugar
  • 3 tbsp soy sauce
  • ¼ cup hot water
  • 3 tbsp miso (soybean paste)
  • 4 salmon fillets
  • 1 tbsp butter
  • 2 tbsp finely chopped fresh ginger
  • 1 tbsp finely chopped garlic (garlic press)
  • 1 Tbsp finely chopped shallots
  • ½ cup sake or rice wine
  • 1 tbsp heavy cream
  • 1 stick (1/2 cup) butter, cut into 8 pieces
  • juice of half of a lime
  • stir fried snow peas or broccoli
  • fresh chopped chives (garnish)
  • Steamed Jasmine Rice
Instructions
  1. Whisk together brown sugar, soy sauce, hot water, and miso paste in a bowl until combined.
  2. Place salmon in a lightly oiled baking dish and cover with miso mixture.
  3. Grill and baste with miso sauce mixture or Broil in oven for 10 minutes, basting the fish with the sauce twice.
  4. While fish is broiling, melt 1 tbsp of butter over medium heat in a small sauce pan and add in the ginger and garlic paste. Cook for 2 minutes.
  5. Add rice wine and bring to a boil for for a couple of minutes til sauce is reduced a little.
  6. Add in heavy cream and return to boil
  7. Reduce mixture by half, about two minutes.
  8. Whisk in butter, piece by piece, and once all is combined and sauce has thickened, remove from heat.
  9. Whisk in lime juice and salt if necessary to your taste.
  10. Place sake glaze on rice and top with a salmon fillet.
  11. Add stir fried veggies to the side and chive garnish on top of salmon.
