Waffles

Waffles

1 and 3/4 Cup flour or 1 1/2 C. flour and 1/4 C. cornstarch
1 Tablespoon baking powder
1 teaspoon salt

2 eggs separated
1 and 3/4 Cup milk or buttermilk
1/2 Cup oil or melted butter

Sift together dry ingredients (flour, baking powder and salt) in one bowl
In another bowl mix  the egg yolks, milk and oil.  Whip the egg whites in a stand mixer or in a third bowl.

Add the milk, egg yolk, oil mixture to the flour, baking powder, salt mixture. Stir til just combined DO NOT OVER MIX.  Batter will be lumpy.  Fold in beaten egg whites. til just combined.  Batter will be fluffy and lumpy. DO NOT OVER MIX.

Cooks notes: For crispier waffles use cornstarch and buttermilk option and do not over mix.  If you don't have buttermilk on hand, mix 2 T. lemon juice or 1 T. white vinegar into 1 Cup of milk for a substitute

For Churro waffles. dip waffles in butter and a mixture of sugar and cinnamon before serving (1/2 C. sugar to 1 T. cinnamon)
