 Caryn's Potato Salad

For years I searched high and low for the perfect potato salad recipe. I tried all different combinations of ingredients and made many complicated recipes in my quest for potato salad perfection.  In desperation I even added bacon, but I could never find what I was after, until I tasted Caryn's potato salad.  Simple and perfect. It is the kind of simple perfect recipe that becomes a guarded family secret, but Caryn was  generous with her talent, time and recipes

4-5 Russet Potatoes boiled and diced

4-5 hard boiled eggs, diced  

            (to make it quick and easy, place peeled and chopped potatoes along with whole raw eggs into an Instant Pot with 1 Cup of water and pressure cook for 4 minutes)

4-5 green onions (entire stalk chopped fine)

5-6 (or more to taste) mini dill pickles chopped fine

1/2 Cup shredded mild cheddar cheese (optional)

1/2 Cup Mayo

1/2 Cup Miracle Whip (if you are one of those people who only have mayo, use                                                 1 C. mayo and add 1 tablespoon of honey to the recipe)

1 Tbsp mustard (or more to taste)

salt and pepper to taste 

garnish with paprika 

Cooks notes: May need to make more dressing with same proportions and add to make salad moist. Some potatoes absorb the dressing more than others. Extra dressing can be refrigerated for another salad. Cover bowl and refrigerate (overnight is best so flavors can meld).
