Amish Baked Oatmeal

Ingredients

2 C. old-fashioned rolled oats (not instant)

1/2 C. light brown sugar

1 C. chopped walnuts or pecans (1/2 C mixed in and 1/2 C sprinkled on top)

1/2 C. chopped prunes, or chopped dates or raisins or mixture

1 tsp baking powder

2 tsp cinnamon

1/2 tsp salt

3 egg yolks and 1 whole egg or 2 whole eggs

2 C. mild

1 tsp vanilla

4 T. (half a cube) melted butter

2 -3 chopped apples (about 2 C)

Instructions

Preheat the oven to 325 F. Grease and 8-9 inch baking dish with butter

In a medium bowl, combine the oats, brown sugar, 1/2 C of the nuts, 1/2 of prunes or other dried fruit, baking powder, cinnamon and salt. Mix well.

In another bowl, mix eggs, milk and vanilla. A hand blender is very good to use to make sure milk and eggs are well combined. Add melted butter.

Spread chopped apples over the bottom of the buttered baking dish. Scatter the oatmeal mixture evenly over the top. Pour liquid mixture over all and sprinkle remaining 1/2 C of chopped nuts on top.  

Bake for 40 minutes, until the top is golden and the oats are set. Serve either warm or cold with milk or whipped cream
