Sherry P's Pumpkin Bread Pudding


2 C.1/2 & 1/2

1 can pumpkin (15 oz)

1 C.(packed) plus 2 T. Dark Brown sugar

2 eggs

1 1/2 tsp. Pumpkin Pie Spice

1 1/2 t. ground cinnamon

1 1/2 tsp. vanilla

10 C. Brioche Bread, cubed (about 17 0z)

1/2 C. Chocolate Chips or raisins or nuts (optional)

Whisk 1/2 and 1/2, pumpkin, dark brown sugar, eggs spices and vanilla in a large bowl.  Fold in the cubed bread.  Add any chocolate chips, raisins or nuts. Pour into an 8 x 10 or 9 x 13 baking dish.  Refrigerate at least 1 hour or overnight.

Preheat oven to 350.  Bake bread pudding until tester inserted comes out clean, about 40-45 minutes.
