Chinese Green Onion Flat Bread
Mix 1 Cup very hot (boiling) water into 3 Cups of flour (2 C. all-purpose and 1 C. cake flour works best but 3 C. all purpose will work) mix quickly and add 1/3 cup cool (tap) water. Mix well, into a smooth elastic dough.

Separate dough into 6 pieces and roll each piece into a circle about 8" in diameter |

Spread each piece with butter and then sprinkle evenly with kosher salt |

Sprinkly with finely chopped green onion or chives or a mixture of onion and chives |

Roll each piece up as if for cinnamon roll |

After rolling up, make into coil, like play dough snake |

When you have finished rolling and coiling all 6 pieces..... |
