Marilyn's Cheesecake
Crust:
11 whole graham crackers (rectangles), crushed fine (use a zip lock bag and crush with hammer or rolling pin)
1/3 C. melted butter
1/2 tsp cinnamon
Mix together and press into a 9 inch cake pan
Filling:
18 oz of cream cheese
3 beaten eggs
1 1/8 C. sugar
3 tsp vanilla
1 tsp lemon juice
Beat until smooth and pour into prepared crust. Bake for 30 min at 350. Cool for one hour
Topping:
1 C. whipping cream whipped with 1/2 C. sugar til soft peaks form
Combine the following 3 ingredients and then fold into whipping cream:
1 C. sour cream
1 tsp. vanilla
1 tsp. lemon juice
Spread topping on cooled cheesecake and chill for 5 hours before serving
