Lemon Poppy Seed Bread
1 C. butter or shortening
1 1/2 C. sugar
4 eggs
1 C. buttermilk
2 T. lemon zest
3 T. lemon juice
1 tsp. vanilla
3 C. flour
1/2 tsp. salt
1/2 tsp. baking powder
1/2 tsp soda
2 Tbsp poppy seeds
Cream sugar and butter. Add eggs and buttermilk and mix well. Add lemon zest, juice and vanilla. Sift together and add dry ingredients. Bake at 350 approx. 35-45 min.
